Eggplant Patties

Ingredients
- eggplant
- grated cheese
- crumbled Ritz crackers
- 1-2 eggs
- green onion
Steps
Peel and cube eggplant. Soak in salt water for 30 minutes. Cook until soft. Mix in other ingredients. Form into patties and pan fry until browned.
