Oatmeal Pie (or Mock Pecan Pie)

Ingredients

  • 8” pie shell
  • ⅔ c. regular oats (uncooked)
  • ⅔ c. light corn syrup
  • 2 beaten eggs
  • ⅔ c. sugar
  • 1 t. vanilla
  • ¼ t. salt
  • ⅔ c. melted butter, cooled

Steps

Combine oats, corn syrup, eggs, sugar, vanilla, and salt. Add melted butter. Pour into shell. Bake at 350℉ for 60 minutes.
